How has your week been? Me just another loooong day at the office and so happy it is the weekend. If you follow my blog, I will every now and then receive FREE products from Influenster, a great site for reviews of pretty much everything. They are awesome! How it works is you complete a few task, depending on the campaign that is going on at that moment, they’ll either send you a physical box or a virtual one full of random products to keep and give an honest review on.

Recently i received my 3rd vox box just in time for Back to School and it was a life savor. I received a $20 gift card to Kohls. For starters, i had NEVER shopped at Kohls and it was right in time for Tax Free Weekend. Yep, I got real lucky. To me Kohls was too high but after shopping the entire store i found some great deals for my girls and i will be back.

Unicorn Frappe Recipe

If you’re a fan of the unicorn food craze—and who doesn’t get even a little excited by pretty hues, glitter, and sprinkles? We’ve got a healthy take on a beautiful blended drink that’s perfect for summer. Our recipe uses sweet strawberries to create a natural pink color, and almond milk and coconut yogurt provide added nutrients. Our secret ingredient is vanilla and coconut-flavored Collagen Fuel, a protein powder that, in addition to providing some tropical flavor, may help support healthy joints, tendons, and muscles. Drink up!

 

UNICORN FRAPPE

Yield: 2 servings

Active Time: 15 minutes

Total Time: 22 minutes

 

INGREDIENTS

For the strawberry sauce

1 pound strawberries, washed, hulled, and sliced in half

¼ cup water

1 teaspoon honey Get Honey!

For the frappe

2 scoops Primal Kitchen Collagen Fuel, Vanilla Coconut Get Coconut

1 cup vanilla coconut yogurt

1 cup almond milk, unsweetened Get Milk

2 bananas

1 cup ice

6 drops natural blue food coloring (optional) Bake Goods

 

INSTRUCTIONS

 

Make the strawberry sauce

 

Add strawberries, water, and honey to a small saucepan. Bring to a boil, then reduce heat and simmer for 5 to 7 minutes, or until strawberries break down and liquid has thickened a bit. When cool, blend until smooth.

 

Make the frappe

 

In a blender, add Collagen Fuel, yogurt, almond milk, and bananas. Blend until smooth. Add blue food coloring (if using) and ice, then blend just until combined and ice is still slushy. In a tall glass, smear 2 tablespoons of strawberry sauce around the inside of the glass in a circular motion. Gently fill the glass with the yogurt mixture. Drink immediately.

PALEO FOR BEGINNERS-ICE CREAM SANDWICH RECIPIE

When the heat is on, there’s nothing better than enjoying a big scoop of ice cream. Here’s a cool summertime treat that Paleo eaters can enjoy featuring frozen, honey-sweetened coconut cream between two buttery, pecan-studded shortbread cookies. Be sure to watch the video—there’s a bit of flipping and turning for the filling to turn out just right—but the results are worth it!

PALEO ICE CREAM SANDWICHES

Yield: 4 sandwiches

Active Time: 5 minutes

Total Time: 8hours and 5 minutes

INGREDIENTS

For the ice cream

1 (13.5-ounce) can coconut cream, room temperature Get Cream!

3 tablespoons raw honey Get Honey!

½ teaspoon vanilla extract Organic Extract

For the sandwiches

1 box Thrive Tribe Pecan Shortbread Cookies Get Cookies!

½ cup pecans, toasted and chopped Get Pecans!

INSTRUCTIONS

Make the ice cream

Flip the can of coconut cream upside down and remove the bottom lid with a can opener (reserve the lid); drain excess liquid, about ¼ cup. With a fork, stir cream until smooth, then add honey and vanilla extract; stir well. Chill in the freezer for at least 8 hours. Remove and let sit at room temperature for 1 hour, or run the bottom of the can under hot water for 15 to 30 seconds.

Place can right side up and pop off the lid from the top (now both the top and bottom lids should be removed). Flip can over again and, using the bottom lid you reserved earlier, push it down gently along the inside of the can while simultaneously lifting the can up, until the coconut slides through to a cutting board. If coconut seems too loose, place it on a plate and re-freeze for 30 minutes.

Make the sandwiches

Using a sharp knife, carefully slice the frozen coconut ice cream into 4 thick slices. Place 1 piece between 2 cookies. Roll the edges of the sandwich on top of a plate scattered with the chopped pecans. Repeat with remaining 3 sandwiches. Serve immediately.
